Raw Soups
Preparing yourself for a juice cleanse requires some forward planning to make sure you have plenty of easily digestible, nourishing and delicious options available. Put some thought into how much and how often you should be eating – we can get a little overexcited of food fantasies, before and after the cleanse, and overeating is common if not properly prepared, therefore don’t overdo it. Raw soups are so delicious especially as a pre or post cleanse treat:
Spinach Soup: blend a handful of spinach, 2 medium sized courgettes, coriander, ginger, a handful of soaked almonds, juice of half lemon, himalayan salt, 2 garlic cloves, 1 cup of chopped spring onions, 2 celery sticks...easy! Garnish with some flax see oil and your favourite seeds.
Mushroom Soup: another earthy soup blended to warm perfection is with shitake and portobello mushrooms with 200 ml of filtered water, 1 generous spoon of unpasteurized miso, shallot, garlic, cayenne pepper, himalayan salt, 1 tbs of maple syrup, 1 avocado and finally topped with your favourite oil and walnut parmesan...two servings please!
Courgette Orange Soup: blend 2 medium sized courgettes with half glass of freshly squeezed orange juice, 150 ml filtered water, 1 garlic clove, a handful of activated almonds, 1 tsp of mixed herbs, cayenne pepper, cold-pressed olive oil and himalayan salt to taste. Garnish with either freshly chopped parsley or coriander.
Carrot Avocado Soup: blend until smooth 3 cups of cold-pressed carrot juice with 1 small ripe avocado, 1 young coconut water+flesh, 2 tsp coconut sugar, 1 small ginger knob, cayenne pepper, juice of 1 lime, himalayan salt to taste. Garnish with freshly chopped coriander.
Pumpkin Soup: creamy and tasty...just blend 2 cups of pumpkin peeled and chopped with 200 ml of filtered water, 1 red capsicum chopped, 1 coconut flesh+water, 1 clove garlic, half red onion, 1 tsp rosemary, 1 tsp paprika, 1 tsp thyme, a small knob of fresh turmeric and ginger root, himalayan salt, and sprinkle with freshly crushed black pepper corns.
Raw Thai Soup: rawsome and easy. Blend until smooth 1 fresh coconut water+flesh with 1 garlic clove, a ginger knob (or galangal, even better!), 1 tsp coconut oil, 2 fresh tomatoes, half tsp of curry powder, cayenne pepper and himalayan salt to taste. Chill for 2 hours to allow all flavours to set. Before serving, pulse your soup and then pour it into a bowl containing some chopped veggies (red capsicum, cherry tomatoes, thinly sliced mushrooms, spring onions, baby corn) and garnish with fresh coriander and lime juice.
Raw Watermelon Gazpacho: so refreshing and hydrating, and incredibly delicious. Its savory taste is achieved by balancing the sweetness of watermelon with veggies, herbs and spice. High-speed blend 2 generous cups of sliced watermelon, 1 cucumber, 1 garlic clove, 3 tomatoes, 1 red capsicum, half cup of spring onions, fresh basil, 3/4 tsp of red wine vinegar, 3 tsp cold-pressed olive oil, half jalapeño, himalayan salt to taste. Chill for 3 hours and garnish with diced avocado, sprouts or micro greens before serving.
